Daily Activity (Mid Practice)


Hi guys, welcome back to my blog where I'll tell you what I did during the practice today. This week is a mid test for practice and my group got the first day so yesterday we came to the kitchen to prepare everything that we were going to use. My group got Indonesian Buffet menu, yeaaay!! But the thing is, we needed to be in the kitchen at 7:30 the latest and before we got into the kitchen I checked my grooming first. Me and my friends took the ingredients that had been prepared yesterday in the chiller.

At 8:30 we did one-line in the Main Kitchen and Mr. Jaya gave us a little feedback. After that we immediately did the doing. Today the 3rd group was helped by the 4th group, and today’s menu was Indonesian Buffet that consisted of:

Appetizer
-             -          Dojang Nakeng
-             -          Rujak Mie (Noodle Salad)

Soup
-          Soto Padang
-          Soto Banjar

Main Course
-          Rendang Beef
-          Nasi Putih (Rice)
-          Terong Santan
-          Plecing Sayur
-          Ayam Bakar Taliwang

Dessert
-          Bubuh Injin
-          Doko-doko Cangkuning

This time I handled the Terong Santan and Rice assisted by my friend named Yudha. Since I already prepared the ingredients yesterday of course I had blended the marinade so all I needed to do was to sauté it. When the marinade started to smell good, I put in the chicken stock (kaldu ayam) and last was the coconut milk (santan).

After that I simmered it and then I went to help Yudha to grill the eggplant we were going to cook. When everything had finished, I started seasoning the sauce with salt also paper and then put tomatoes for one minute before back to simmer it again. After the last ingredient had been put in, finally it was the time for the eggplant to enter the stockpot.
At 11:00 all the food was ready except the dessert section which was the Doko-doko Cangkuning because the lack of ingredients but thank God we managed to finish it as soon as possible. And finally at 12:00 all the food had been served in the restaurant then we cleaned up our work area also continued to prepare ingredients for the 4th group. And at 16:00 we did our daily activity which is general cleaning.
