Daily Activity 5-1 (Ala Carte 2)


Assalamualaikum Wr. Wb.
Hello guys. We have been entering the fifth week in this third semester. I’m gonna tell another story about my daily practices in the Poltekpar Kitchen. At 8.30 we already made oneline, supervisor called out our names, and we put our belongings in the locker room, and we made oneline again in the Main Kitchen. But Dina asked me to accompany her to take her apron in her boarding house, she forgot it anyway. It was pretty much different comparing to a few weeks ago. On this week, we had to make Ala Carte Menu 2.
But actually they had one big similarity; there were a lot of foods we needed to cook. For the appetizer, there were Chef Salad, Jellied Fruit Salad, Empek-empek, and Thai Papaya and Mango Salad. In soup menus, there were Pho Bo (Vietnamese Beef and Rice Noodle Soup) and Potato Chowder. For the main course, there were Potato Gnocci with Tomato Sauce, Beef Wallington (Mashed Potato, Peas, Carrot and Pearl Onion with Tarragon Butter), Prawn of Meuniere (Spaetzle, Green Bean with Roasted Pepper and Bacon), and Mixed Rice (Nasi Putih, Jukut Urab, Rendang, Sate Lilit Ikan, Acar).
For the dessert, there were Red Velvet Roll, Crème Brulee, Honey Ice Cream, and Rice Flour Dumplings (Katiri Mandi). For the Great for Sharing menu, we had California Burger, Club Sandwich, Grilled Cheese Sandwich, and Deep Fried Calamari with Spicy Tomato Sauce and Aioli. Yup, those were the menus in Ala Carte 2. Our supervisor divided the menus to each of us. And, I got myself a Chef Salad menu. We instantly prepared all the things we needed for tomorrow. I just had to chop up the carrots with jardinière cuts, and for the remaining ingredients it would be better if I prepared it tomorrow, because my supervisor said that most of the ingredients were easily rot. Once I finished chopping the carrots, I took the other ingredients and put them in the chiller. I got free time, so I helped my friends to prepare everything they needed. At 5 pm we had general cleaning to end the day.
